Spicy Potato Crush


Ingredients:
Potato-2-Boiled
Green Chillies-2-Finely Chopped
Green Coriander Leaves-For Garnishing-Finely Chopped
Ghee-2 tsp
Cumin Seeds-1/2 tsp
Black Pepper-1/2 tsp
Salt-to taste
Lemon Juice-2 tsp

Method:

Peel and crush boiled potatoes in a bowl. Keep aside.



Heat ghee in a pan.



Add cumin seeds and fry till change color.



Add chopped green chillies and fry for a moment.



Now add crushed potatoes and mix well.



Add black pepper and salt. Mix well. Cook for 2-3 minutes.



Finaly, add lemon juice and mix well. switch off the flame. Transfer it to a bowl.



Garnish it with chopped green coriander leaves and serve hot with paratha or roti. Enjoy!!!



Tomato Soup


Ingredients:
  • Tomato-3
  • Ghee-1 tsp
  • Cumin Seeds-1/4 tsp
  • Salt-to taste
  • Green Coriander Leaves-1 tsp-Finely Chopped
  • Water-2 Cups

Recipe:

Wash and boil tomatoes in 2 cups of water til the skin breaks down.



Switch off the flame. Remove tomatoes from water. Do not throw away the water. We are going to use it for making soup.



Let them cool for some time. Remove the skin and seeds. Blend the tomatoes to make smooth pulp.



Add the pulp to the water (In which you boiled tomatoes). Add salt to it and mix well.



Boil it on low flame for 10-15 minutes.



Switch off the flame. Transfer tomato soup in a bowl.



Heat ghee in a pan.



Add cumin seeds to it and fry till change the color.



Add fried ghee and cumin seeds mixture to the tomato soup. Mix well.



Garnish with chopped green coriander leaves and serve hot in soup bowl. Enjoy!!!



Moist Dark Chocolate Cake


Ingredients:
  • Cake Flour-3 Cups
  • Dark Cocoa Powder-6 tbsp
  • Baking Soda-2 tsp
  • Salt- 1/2 tsp
  • Water-2 Cups
  • Sugar-2 Cups
  • Vanilla Extract-1 tsp
  • Vinegar- 2 tsp
  • Oil-1/2 Cup
  • Cake Pan
  • Toothpick or Skewer
  • Oil for Greasing the Cake Pan

Recipe:

Sift cake flour in a bowl.



Add cocoa powder to it. I used dark cocoa powder. You can use regular cocoa powder if you want.



Add baking soda and salt.



Mix all dry ingredients well. Keep aside.



Take 2 cups of water in an another bowl.



Add 2 cups of sugar to it.



Add vanilla extract and vinegar to it.



Finally, add 1/2 cup oil to it.



Whisk all wet ingredients until sugar gets dissolved.



Add the mixed dry ingredients to the mixed wet ingredients. Mix well with the help of hand mixer. Batter for cake is ready.



Grease the cake pan with oil. Pour the batter into the pan.



Preheat the oven to 350F. Bake for 35-40 minutes.



Keep checking once in a while and insert a toothpick or skewer into the cake. If the toothpick or skewer comes out clean, the cake is ready. Take the pan out from oven. Let it cool.



Keep in the refrigerator. Cut pieces into desired shape. Enjoy!!!



Vegetarian Seekh Kabab


Ingredients:
  • Whole Green Mung-1 Cup
  • Onion-1-Medium-Finely Chopped
  • Garlic Cloves-2-Crushed
  • Fresh Ginger-2" Piece-Grated or Finely Chopped
  • Large Carrots-2-Grated
  • Oil-1 tbsp
  • Chickpea Flour-1 tbsp
  • Cumin Powder-1 tsp
  • Garam Masala-1 tsp
  • Coriander Powder-1 & 1/2 tsp
  • Turmeric Powder-1/4 tsp
  • Ginger Powder-1/4 tsp
  • Salt-to taste
  • Black Pepper-1 tsp
  • Red Chilli Powder-1/4 tsp
  • Green Coriander Leaves-1 tbsp-Finely Chopped
  • Lemon Juice-1 tsp

Recipe:

Soak green mung in water for 1-2 hours. Wash properly.



Pressure cook green mung till 3 whistles come. Drain the water off from mung and put to the side to cool a little. Place them into a bowl and sprinkle with salt and 1/2 tsp of black pepper. Mash the mung with a potato masher. Keep aside.



Heat oil in a pan.



Add onions and fry on a medium heat until they start to soften up. Do not let them brown.



Add ginger and garlic and stir well. Fry for a minute.



Add turmeric powder, red chili powder, cumin powder, garam masala, coriander powder and remaining black pepper. Mix well again. Fry for 2 minutes.



Finally, add salt to it. Mix well. Take your pan off the heat.



Place grated carrot into mung mash.



Add spiced onions mixture into mung mixture. Mix well.



Add chopped coriander leaves into the green mung mixture. Mix well.



Add chickpea flour and mix well again.



Drizzle oil onto a large baking tray.



Divide mung mixture into three-four parts , one at a time, mould mung mixture around the skewer and place onto the baking tray. It will be soft and sticky but don't worry it is supposed to be this way.



Preheat the oven at 425 F .Place the baking tray into the oven. Cook for 20-25 minutes until they start to turn golden.



Take them out of the oven and gently use a spatula to loosen the underneath of the kebab up, this will shape the kebabs up more and also prevent them from sticking when you come to remove them soon. They will feel a little soft to the touch here, this is normal.



Place back in the oven for a further 5-10 minutes until they turn a lovely crisp brown color.



When kebabs are ready, use 2 spatulas to gently remove the kebabs from the baking tray. Remove the skewer. Sprinkle lemon juice on it. Serve hot with ketchup or green chutney. Enjoy!!!
